White Wines Chardonnay
FRANCE Burgundy
Chablis The crisp and mineral side of Chardonnay, with a tart and steely character. In its youth, aromas of seaspray, oyster shells, nuts, lemon custard, and mushrooms are profound. As the wines develop with age, butter, honey, and oozing cheese aromas are intensified. Flavors of tart green apple, and lemon with razor-like texture and acidity. Meursault The soil in Meursault benefits from an extremely low water table, forcing its vines to drive its roots deep into the ground in search of water. This gives the vines access to mineral deposits rich in iron and magnesium that translate into the wines. Coche-Dury and Roulot are the most highly-regarded domaines. Chardonnay Côte de Beaune
Puligny-Montrachet The village of Puligny is considered to be the ideal terroir for Chardonnay. With 4 Grand Crus and many Premier Crus surrounding them, Puligny is home to some of the most sacred vineyard ground in all of France, and possibly the world. These wines are generally on the riper side of Chardonnay, and can age gracefully. Look to Etienne Sauzet, Paul Pernot, and Domaine Leflaive for premier examples. Chassagne-Montrachet
The white wines of Chassagne-Montrachet have power, and a round, creamy mouthfeel that is seductive. The wines are more floral than the wines found in Puligny, with slightly more use of new French oak during élevage. Top-tier producers include Ramonet, Marc Colin and the rising stars, Bernard Moreau and Pierre-Yves Colin-Morey. Soil type: Oolitic Bathonian limestone Bin No. Bottle

Chardonnay Côte de Beaune
Saint Aubin While not the most famous of the Cote d'Or villages, Saint-Aubin is one of Burgundy's top-performing wine communes in terms of both volume and vineyard quality; nearly three-quarters of its sites have Premier Cru status. As well, while Saint-Aubin wines are rarely considered to be among the region's finest, they are known for offering excellent value for money and can provide a good introduction to Burgundy wines. Pierre-Yves Colin-Morey is based out of here and produces some of the most stunning examples. PREMIER CRU

Sauvignon Blanc FRANCE
Loire Valley Some of the world’s most mineral wines from various soils loaded with limestone and silex. The wines are flinty and highly perfumed with musky aromas of flowers, tart green apples, gooseberry, and a distinctive herbaceous quality reminiscent of fresh-cut grass. The palate delivers fresh grapefruit zest, and high-pitched citrus flavors. This is terroir at its finest. Here are a few of the most consistent producers: Bin No. Bottle SANCERRE Soil type: Limestone, Chalk-tuffeau, Kimmeridgian marl, flinty pebbles (caillottes)

Chenin Blanc FRANCE
Loire Valley These wines are produced in both dry and off-dry styles, and benefit from high mineral content in the tuffeau soils from which the vines grow. Tart tree fruit, lemon, chamomile, and ginger dominate the nose and palate. The more oxidative versions found in Savennières and Vouvray can give off aromas of hay, lanolin, pistachios, and bruised apples. All of the wines have crisp and piercing acidity, and can be great matches with our menu. Bin No. Bottle ANJOU-SAUMUR Soil type: Chalk-tuffeau, schist, clay

Riesling FRANCE
Bin No. Bottle ALSACE Alsace is the only region in France known for its Riesling. It produces a rich and powerful style that is classically fermented dry, but many versions of off-dry and sweet Rieslings can also be found. These wines are known less for their citrus character and more for their floral aromatics and steeliness. Soil type: Various fertile soils over schist, volcanic sedimentary rock, granite, clay, sandstone & limestone marl

GERMANY MOSEL Wines from the Mosel are some of the most transparent wines in the world. The wines are the lightest and most mineral-driven Rieslings in all of Germany, producing wines that are incredibly compatible with food. The climate in the Mosel is marginal and grapes struggle to ripen. Steep vineyard slopes create quick drainage, so vines must penetrate the slate beneath them to access water deep below the surface. Soil type: Devonian blue and red slate

Pinot Noir Chambolle-Musigny
Many people believe that Chambolle-Musigny produces the world’s ideal expression of Pinot Noir. It has richness and finesse, yet still retains an underlying power and firmness. Higher amounts of chalk in the vineyards, and more wind, give the wines more acidity and higher aromatics.

Tempranillo SPAIN Rioja
The most famous red wines of Spain come from Rioja. These wines age gracefully and can develop intriguing aromas of sweet red cherry, vanilla, cinnamon, cedar and cigar tobacco. Rioja produces medium-bodied red wines with sweet and sour red cherry flavors and gripping tannins that come from extended aging in traditional American oak barrels.

Nebbiolo ITALY
Piedmont Langhe
Soil type: Calcareous marl, sand and clay The Nebbiolo grape from Northern Italy’s Piedmont region produces some of the longest lived wines in all of Italy. They are medium-bodied red wines with dry tannins and vibrant acidity. The sturdier versions of Barolo can be found in Serralunga d’Alba and Montforte d’Alba, while the softer, more elegant styles can be found in La Morra and the commune of Barolo itself. Look to Barbaresco for this same element of delicacy and finesse and earlier drinking versions of Nebbiolo. Bin No. Bottle

Sangiovese ITALY
Tuscany The wines of Tuscany have seen a rush of development over the last few decades, and the Chiantis and Brunellos of the modern era are powerful and assertive. However, the producers below represent the old-world traditionalist methods of production that remain elegant and are true representations of the region. The ‘galestro’ soils in Tuscany give these wines a unique earthiness. Sangiovese is a medium-bodied red wine that has characteristics of tart red cherry, with underlying aromas of vanilla, leather and dried herbs.
