Tiramis u Layer Cake 29Jun08 Ever since I made my wicked banana cake for a morning tea event held last month at work, I’m beginning to gain a reutation for being a good baker!cook and now I am always harassed to make something" #$hen will you be bringing in some sweets , %inda& ' It’s my birthday tomorrow, lease bake me a cake( ' I hear you’re a whi) in the kitchen* make something and I’ll be the +udge of that wink wink-" It’s .uite flattering, but I kee finding myself in situations where I can’t refuse them and as a result, I have to make something" I never break a  romise, so, this weekend, I made my ever famous hummingbird cake and a tiramisu roulade/ turned/layer cake" I thought making a roulade would be easy " It’s basically a rolled u songe cake with cr eam in the middle" ow hard could that be& $ell, after trying to make one today , I’ve realis ed that it’s .uite difficult( I attemted this recie twice and failed both times" 1he songe cakes came out beautifully cooked each time, but when it came time to roll it, it would create three distinct cracks, then subse.uently break" I contemlated giving it a third go, but I didn’t have enough eggs and was  just over it " s $ "3 4ields once said, #If at fir st you don’t succeed, try, try again" 1hen .uit"  5o use being a damn fool abo ut it"- $hich is e6actly what I did" I tried again, and again, but then gave u' s I was about to mush it all together and eat it like an Eton mess, I suddenly had the brilliant idea of creating a layer cake instead" I trimmed the edges, brushed each

2 tablesoons coffee li.ueur 

2 teasoons instant coffee granules

Cake

= eggs

2 tablesoons icing sugar

caster sugar, to srinkle

?" Areheat the oven to 2003" %ine a 7wiss roll an Broughly 2@C=0 cm with non/stick

 baking aer" 7et aside"

2" In a small saucean, combine the water, sugar and coffee li.ueur and bring to a boil"

7immer for @ minutes until the mi6ture thickens and becomes syruy" Demove fromheat and stir in the instant coffee granules" llow to cool and set aside"

=" issolve the coffee granules in the boiling water" ;eat together the eggs and sugar in

another bowl until ale and thick" 4old in the flour and dissolved coffee" Aour the

 batter into the reared an and srinkle with the flaked almonds" ;ake for ?@ minutes

or until browned and sringy to the touch" llow to cool"
