Le djeuner avec Emma Beddington
me dirige vers La Paix, monconvive mappelle, dubitatif. Tu es sre que
cest l ? Il y a une boucherie roumaine.. vitantde justesse un homme qui porte un mouton entiersur lpaule, je dis : Oui, cest bien a ! Jarrive !
La Paix est inattendu : une lgante brasseriealliant service lancienne et cuisine moderneface labattoir, en plein quartier cosmopolitedAnderlecht. Ce restaurant tait l bien avant lesmagasins discount et les stands de march. Ouverten 1892, La Paix voque tout de suite le Bruxellesdantan, avec ses rampes en cuivre, ses lambris,ses pompes bire rutilantes et ses nappesamidonnes. lentre de la cuisine ouverte trneun magnifique gaufrier chrom et crme.
Lentre dultra-classiques croquettes de fromagemontre avec quelle assurance le chef David Martinallie ancien et moderne. Renverses (chapelure aufond de lassiette et onctueuse pure au fromagesur de minces tranches de toast croustillant),elles sont accompagnes de lgumes vert vif :jeunes fves, sorbet de petits pois et minuscules
courgettes-allumette servies avec leur fleur.Mais on y vient pour le steak et il serait malvenu
de commander autre chose. Notre chateaubriand(servi bleu ou saignant) est tout caramlis dehorset fondant dedans, servi avec une dlicieuse sauce la moelle et des frites au jus de buf. Je vousmets au dfi de prendre une gaufre aprs a.
Cest loin dtre donn, mais La Paix vaut ledtour. Jy vais pour me rappeler pourquoi jaimecette ville : cest Bruxelles dans lassiette.

An elegant brasserie combining old-school
service and accomplished modern cooking isnt
what you expect to find opposite the abattoir in
the bustling melting pot of Anderlecht. Actually,
La Paix was here long before the discount stores
and pile-em-high market stalls. It opened in
1892 and walking in today feels like breathing
in the very essence of old Brussels: brass rails
and wood panelling, polished beer taps and
starched tablecloths.
A starter of ultra-traditional cheese croquettes
shows how assuredly chef David Martin marries
old and new. Theyre turned on their head,
literally: breadcrumbs line the base of the plate
and the unctuous cheese pure sits on thin
slivers of crisp toast. They come with a bowl of
vivid green vegetables: baby broad beans, pea
sorbet and the tiniest courgette imaginable.
Still, people come here for the steak. Our
Chateaubriand (served blue or rare only) was
fiercely caramelized outside, tender within,
served with marrowbone sauce and beef dripping
chips. I defy you to eat a wae aer that.
Its far from cheap steaks are 40, starters
hover around the 24 mark but La Paix is the
place I go aer another dispiriting tram journey
or administrative snarl-up to remember why I
love this town; its Brussels, on a plate.
