MissionLes travaux de recherche, de développement et de transfert au CRDSH
visent à stimuler le secteur agroalimentaire canadien à mettre en marché
des aliments sains et de grande qualité. Ces travaux sont menés de
façon intégrée afin d’aider l’industrie à innover dans les procédés et la
transformation des aliments qui répondent aux besoins du marché de
façon propre et durable.
1. Innover dans les processus, la production d’ingrédients alimentaires
et les procédés de transformation des aliments.
2. Caractériser les propriétés technologiques et nutritionnelles des
ingrédients et des aliments issus de nouvelles technologies et
nouveaux procédés pour la production d’aliments à valeur ajoutée.

Prevent Food Illness and to Valorize Functional Ingredients
➢ Encapsulation of antimicrobials / natural antioxidants to replace
unwanted synthetic food additives (edible coating, active packaging,
nutraceutical compounds)
➢ Active nanopackaging (antimicrobial/antioxydant/insecticide) with
control release and intelligent packaging (detection of pathogens)
➢ New technologies: innovative physical treatments to assure food
safety (Gamma rays/ x-rays/UV-C/Ozone).
Chimioprevention of functional ingredients/probiotic
bacteria and yeasts and their metabolites
➢ anti-cancer in vitro and in vivo /antioxydants in vitro and in situ in
foods system
➢ Characterization of the most effective extracts (HPLC, SEC, FTIR,
etc.)
➢ Measurement of in vivo chemopreventive potency (rat
coloncancer study, microscopic analysis of aberrant crypt foci)
