The organization has its origins in France where the culinary
experience centred round the humble hand turned spit - hence the
name ‘Rôtisseurs’.
All over the world Chaîne members gather to taste and enjoy the
variety of food presented in a most eye catching manner keeping in
mind that you feast with your eyes before tasting.
It is quite normal to have seven or eight course meals which are
prepared to perfection by the establishments with chefs always
trying to outdo their previous presentations.
It is our aim to improve the culinary standards of hotels and
restaurants in Mombasa, Kenya’s leading tourism destination.
Diners often break into spontaneous applause upon presentation of a
particularly outstanding dish.
Chaîne des Rôtisseurs in Mombasa has maintained extremely high
standards with our hosts pulling out all the stops to make each
dinner experience a memorable one.
Chaîne Mombasa continues to raise the bar at each event.
Establishments are known to purchase a whole range of cutlery,
crockery, linen and uniforms for the entire service crew specially
for a Chaîne dinner.
The waiter service is simultaneous which requires
weeks of training for the entire crew.
Needless to say these evenings are a ‘black tie’ affair and it is
delightful to see the members dressed for the occasion.
Chaîne also enjoys informal functions whereby the very high
standards of food and service are met but the dress code is
relaxed.
Chaîne Mombasa has picked up momentum the past few years and we are
proud to induct 16 new members on this occasion.
These include the Honorable Najib Balala, Minister for Tourism and
the French Ambassador to Kenya, His Excellency Etienne
Poncins.

Madame Marie Jones We are privileged to have
Madame Marie Jones, Member of the Conseil d’ Administration et
Magistral from Paris, France who will be presiding over the
induction Ceremony.
Months of planning goes into a single dinner to ensure
perfection.
Each course is presented with a suitably matched wine.
The right ambiance is created for the night, music and décor given
as much attention as the food.
As a result of this hard work and dedication, we have enjoyed
unparalleled dining experiences.
I have absolutely no doubt that this movement will continue to grow

To mark the occasion International President Atallah has appointed
International Board Member Mrs Marie Jones to represent him at an
Induction Ceremony and Gala Dinner.
Included in the inductees are a new Bailli – for the first time, a
lady – and two VIPs. “Rapprochement” is a French word which means
“bring closer together”. It is one of my favourites. In 14 years as
a Chaîne member, especially during the last five years of which I
have
been Bailli Délégué for all Kenya, I have always tried to live up
to the ideal and encouraged everyone else to do likewise.
Friendship, the pleasures of the table and meeting friends old and
new are cornerstones of the Chaîne ideology.
Message From Madame Marie Jones
Dear Friends, I am delighted to have been appointed Inducting
Officer to represent our President at the Chapitre of the Bailliage
of Kenya in Mombasa.
I have been a Chaîne member for over thirty-five years.
I joined as a Dame de Chaîne and since then have held most of the
officer positions, before being promoted in 1994 to Bailli Délégué
of Great Britain followed by appointment to the International
Conseil Magistral in 1995.
Throughout these years I have enjoyed being part of this wonderful
association of ours and now as a Member of the International Board
of Directors (the Conseil d’Administration) I continue to find
excitement and interest not to mention the
opportunities to make new acquaintances.
As you know, our Confrérie is based on the concept of bringing
Professional and Amateur members together, a unique characteristic
which distinguishes us from other food and wine societies.
The international presence of our association, now significantly
represented in over 70 countries, is also one of our most valuable
assets.
One must always try to contribute and I believe the best way is to
give something to the young.
We in the Chaîne do this through the long-established International
Jeunes Chefs Rôtisseurs Competition, and since 2007 through the
International Jeunes Sommeliers Competition.
From my several visits I know the warm welcome that I can expect in
Kenya.
It is the welcoming spirit that is truly one of the major benefits
internationally of the Chaîne and indeed is one of the greatest
attractions of
membership. Members of the Chaîne,
united in friendship, have the duty to fraternise in harmony and to
respect and support each other.
This experience is the true nature of our Brotherhood.

MTTI In our continued endeavours
to improve the culinary standards of restaurants in Mombasa, Chaîne
des Rôtisseurs has played a major role in the rehabilitation of the
kitchen facilities at the Mombasa Technical Training
Institute.
The kitchen stations are now fully furnished with state of the art
equipment.
We are planning to sponsor cooking competitions for the students
and present awards to the winners.
These are principles in which I strongly believe. The Chaîne gives
us the opportunity to live by this code to the benefit of our
society in general, but specifically to assure harmony locally,
nationally and in the worldwide Chaîne at large.
I pray for the continuance of these principles to ensure the Chaîne
in Kenya is the best!
