10amRunning with timeUnearth Lausanne’s charm thanks to the hidden messages and challenges found using the Foxtrail app and embark on a fun race in groups of two to seven people. You can choose either “Citi”, which explores the city’s historic spots, or “Alti”, which focuses more on nature, steering you through green areas.

Its 850 founders get a free appetizer for life, enough to create a fantastic atmosphere in the heart of winter; the regional wines are served with a delicious platter of dried meats and cheeses.

7pmSuspended in time Located in the quarter found beneath the station, with its end-of-century atmosphere and Bohemian-chic clientele is the Café de Grancy, a place made extremely popular by its delicious but light cuisine and relaxed atmosphere. This is the ideal eatery to let time run its course during an evening in good company.

9pmTo the end of the nightParty until the early hours in one of the city centre’s many night spots, like the MAD, Les Docks, and the D!, all of which make Lausanne one of the most popular cities for young people who are on a quest to find good music or a great club to dance the night away.

Montreux’s Christmas Market, from 24 November to 24 December, sits along the road bordering the lakeside esplanade amid an enchanting spectacle offering beautiful presents made by local artisans, as well as mulled wine and a whole selection of delicious food.

Charlotte Chable is a young Swiss alpine skier that never ceases to amaze.

During the Junior World Championships in Norway she was even within reach of the podium in the slalom; she continues to prepare tirelessly for her next challenges.

CharmThis smiling young woman exudes happiness and comes from a family of great sports men and women. After falling in love with snow sports from a very young age, she is now known on the competition circuit for her freshness, spontaneity, and Swiss charm.

CompetitionIt is in Villars that the young champion cut her teeth. “I grew up very close to the ski slopes, which I could go on by myself, even when I was little. That’s one thing that’s great about the resort.” Charlotte sings the praises of this big skiing area that sits in the sun, where her taste for competition was born.

PerseveranceEven two knee ligament injuries and a broken foot did not defeat the young woman’s cast-iron morale – as a result, Charlotte began training again as soon as she could. “Sometimes when the conditions are bad I ask myself: ’Wow, is this really what I want to follow as a career path?’ but I have strong character and hate giving up,” concedes the athlete.

PassionVillars remains her home when she is not travelling around the world for nine months of the year to attend championships, or to train in Ushuaia in Argentina during the summer. “It’s in Villars that I learned to love this sport and when I finally get a bit of time at home in the spring, I continue my training in the excellent sports facilities there. I love this sport and I always finish what I have started,” says Charlotte enthusiastically, who adds: “And I love Villars where my passion was born!”

Leysin Col des Mosses “Sport, nature and joy

”These are the three words young cross-country skiing champion Arnaud Guex uses to describe Leysin, the ski resort that saw him grow up. Guex is a local celebrity, as in 2016 after just turning 16 he took part in the Junior Olympic Games in Lillehammer and was the only Vaudois contender.

Sport It is thanks to Leysin that Arnaud discovered cross-country skiing, after playing football, taking part in athletics and running. “The resort does a lot for sport: the facilities are excellent and extremely varied.” The young athlete progressed at a dizzying speed in just four seasons and is one of the most promising cross-country skiers in Switzerland. He is currently complementing sport with studies in Brigue, which allows him to prepare for championships while still going to school.

Nature Arnaud immediately became comfortable in a demanding sport that takes place in the middle of nature and where camaraderie is very present. “There is a great kinship among skiers, even when in competing teams,” says the sportsman who is convinced that the discipline’s proximity to nature is an important factor

in this rapport. “We train on pistes that are just wonderful, and that is motivating,” adds Arnaud. He hugely appreciated his experience at the Olympics in Norway where, he says, the landscape was also very beautiful and where he made new friends.

Joy“In the competition, you must give it your best to succeed, so you have to really love what you do,” he explains, revealing a surprising maturity. “Enjoyment is key,” he adds. Arnaud is deeply grateful to his parents and Leysin for their support. He says that when people get together to support you, that feels good and makes you want to always do better. “Coming back to Leysin is always a source of great joy,” he says when referring to the rare times he goes home.

The beautiful region that spans the picturesque villages of Rossinière and Rougement via Château-d’Œx attracts families, food-lovers and sports afi-cionados. The joys of snow sport in its many iterations and for all ages, goes hand in hand with discovering local food and drink including Etivaz AOP cheese, produced using milk from the cows that roam the beautiful pastures. And for adventure, nothing beats a flight in a hot-air balloon lifting off from the alpine aerostation centre, or the magic of the International Festival whose show during the month of January fills the sky with balloons of all different colours and from all over the world.

GenerosityRiadh begins by acknowledging the volunteers’ generosity in giving up their time to make this festival the region’s key event. Even he takes time off from his job as a project manager at Fondation Urgences-Santé to ensure the festival is successful. “The volunteers are the festival’s lifeblood,” he says, reminding us that Switzerland is a country of militiamen.

MasteryWith a background as an engineer and physicist, Riadh subscribes to a Cartesian ethos. But what he loves about hot-air balloons is taking off from one place without knowing where he will end up. “Everything is decided once you are in flight. As a result, it requires constant control when you are at the mercy of the winds. Château-d’Œx’s topography with its cool valley morning wind that carries away the balloons and heats up in the sun to bring them back, is ideal,” he explains.

Authority“When conditions are perfect or else too bad, the situation is easy to handle. This happens only one time out of every five. On all other occasions, you have to monitor the parameters,” he says. As a pilot himself, he is best placed to handle the aeronautical side of this magical but logistically complex event, including acquiring the necessary permits and validation for the 60 balloons taking part.

EnthusiasmWhen he was studying, Riadh wanted to be closer to the mountains he saw in the distance: “I told myself that I wanted to work at the foot of the mountains,” he recalls. When he landed in the canton of Vaud 20 years ago, he had found heaven. Now in the Pays-d’Enhaut, every year in January Riadh Hadj-Azzame releases a bunch of balloons into the sky of the country he adopted as his second home.

PrecisionFrançois Junod has a background in micromechanics, a discipline that has brought fame to Sainte-Croix since the 18th century. It is there that were born the legendary Bolex H16 cine camera and Reuge music boxes. “I wanted to do something new with the traditional techniques, I wanted to create something that no one else had done yet.”

PatienceIt took François Junod 12 years to design the writing android – a project others had told him was an impossible dream. But his unfailing perseverance and a know-how that pushed the limits of technology were finally rewarded. “It’s really the best thing when an android automaton can do something instead of a man and do it just as well,” he recalls with wonder.

CreativityFrançois Junod continues to accumulate patents from the watch industry, including on a recent signing machine the size of a telephone. Where does his creativity come from? “I draw all the time and that’s how I come up with ideas.”

François Junod’s automatons that he creates in his Sainte-Croix workshop, in the region of Yverdon-les-Bains, are sought after the world over, especially since he designed his Pushkin android in 2010. For the first time ever, an automaton began writing and drawing like a man.

Preparation

Cut five 1 cm slices for each fish fillet. Cut the rest into small cubes.

Slice the asparagus in two. Cut the back parts into small cubes.

Mix the mayonnaise and tarragon, adding a little lemon juice (to taste).

Add the cubes of smoked char and asparagus, before mixing.

Serving

1) Serve up the asparagus on the plates.

2) Place the mix in the middle.

3) Over the top, place 5 slices of smoked char per person.

4) Garnish as you wish (small green leaves, salad, toasted bread chips, grissini breadsticks etc.).

Profile Peter Hasler – Café de Riex

LavauxHaving arrived more than 30 years ago from his native Emmental, Chef Hasler still believes that Lavaux is the most beautiful region in Switzerland. “It’s magical to live in a place where there is the lake, the mountains, the vineyards and even pastures!” More and more visitors come to discover the superb terraced vineyard that cradles his village since it was declared part of the UNESCO World Heritage site. “For nothing in the world would I leave this region,” he promises.

The menu slateWhen he took over the Café de Riex three years ago, Peter Hasler had put together an à la carte menu, but he soon realised that customers trusted him and came more for his daily suggestions. To cater to the demands of the market and play with the seasons, he wrote the menu on a slate. It worked a treat. “I always remember to include a dish like fish for those with a lighter appetite,” he says.

WinesPeter Hasler is effusive in his praise of the Lavaux wines, which play a very big part in his café. He can hardly contain his enthusiasm about the indigenous grape varieties such as Chasselas, and especially the Plant Robert, which he says is evolving wonderfully. With great satisfaction he adds: “I have a very fine choice of wines.”

Authenticity Peter Hasler seeks out excellent produce and always prioritises proximity of ingredients. As a butcher’s son, he doesn’t shy away from preparing pork products, calf sweetbread and kidney; people come from far away to taste his beef tongue. What is his favourite dish? Ham on the bone with a nice potato salad. He believes regional produce equates to authenticity and he is very strict about where food comes from. “My cooking is simple, fresh and honest. For me the best reward is when customers spend hours at the table.”
