Hi Everyone, Hope you all had a Blessed Easter and didn’t let the rain get you down. We were invited to spend the day at my step-daughter’s and son-in-laws home in Lockport. We had a wonderful time visiting with the family. The food and company were fabulous! And we got to visit with our oldest grandson who is in the Marines and our oldest granddaughter who recently graduated from college. It was a special day because we were with both daughters, both granddaughters, and both grandsons!. We were truly Blessed today. The time went by so quickly, before I knew it, it was 6 P.M. and time for us to hit the road to get back home. Luckily, we caught no rain and the traffic was very light. A truly enjoyable day!

For once I was a little on top of things. Since I knew we were going to be away all day Sunday I decided to do my craft project Friday afternoon. And as usual, I had to enlist the help of my “partner in crime”. I very rarely wear nail polish, so I had to call on Carlea’ to loan me a bottle of hers. I than dug some floral wire out of the closet and began shaping it into a flower design. I then started to apply the nail polish. The first one took me a little while to get it to adhere to the wire, but after I got that one done the rest were a breeze. After the petals were completely dry I added the center stone. You can use these to make hair barrettes, bracelets, a necklace, just anything your immigration will let you create. Now to finish the rest of them so I can make a barrette for Carlea’ Oh, by the way, we actually found this tutorial on You Tube. This was a lot of fun to do but, it was a little messy. So be sure your work area is covered so you won’t mess up your table. Well, that’s my craft for this time. So what will your next craft be? Mine…I don’t know. But I know it will be a lot of fun!

March 28, 2016 – The Louisiana Department of Wildlife and Fisheries has reopened all roads in the Joyce and Maurepas Swamp Wildlife Management Areas with the exception of a portion of Boyce Tower Road on Maurepas Swamp WMA. That portion of the road, closed near the bridge on Boyce Tower Road, is expected to be opened later this week. The roads in these WMAs have been closed since March 15 due to flooding caused by heavy rain. Joyce WMA is a 27,487 acre tract located in southern Tangipahoa Parish five miles south of Hammond. Maurepas Swamp WMA, which consists of 122,098 acres, is located approximately 25 miles west of New Orleans and along the south shore of Lake Maurepas. I have been having a few trips with little results. That’s fishing.

When I met Tim at the dock the fog was thick and it was still dark. We sat at Venice Marina and had breakfast waiting for things to clear up. He has a brand new Calcutta 26 with less than 20 hours on it. It was already daylight and it looked like we had a window to get going. I eased out of the marina and turned into Tiger pass. The plan was to go East. I never was not past the shrimp dock when I decided to turn around and go West. I did not want to do the thick fog and boats on the river again. The river is up again after all the rain we had and the floating debris does not show on radar. This trip was to show him a safe way in and out of the marina. Today would be the ultimate test. I let him run his own boat and kept a close watch his electronics. We ran down red pass, out into the gulf, across the mouth of the river, past the domino rigs and to the 93’s all on instruments.

The water at the 93’s was dirty as heck. I made a troll around the 86 rig but was not feeling anything. What I marked did not even look worth staying there. Instead of going out to the furthest rig in the block I ran to 143. The fog was still heavy but cleared up enough to give us a 2 mile visibility. It was 10:30 and conditions were improving in the air but the water was not. I was not liking my decision I made to go west. Mikee was on the lump with nothing at all and he was heading to Medusa. Will came from 133 and 152. He said conditions were worse there. All 3 of us had not even a sniff all morning. Will went to 93 and I ran to a nearby shrimp boat. The water was clean green below at the dragger and mi screen marked nothing around it. We actually were able to follow the cables all the way to the nets and marked some schools in front of the nets and just behind them but all deep and not worth fishing. Will and I decided to move around the shelf keeping in touch.

I got to a rig in a bit better water. It was still dirty green though. My first pass gets a hit. I was not looking for a barracuda. Made a few more passes trolling a Russelure and a Mirror lure. Blackfin and small yellows like the Mirror lure but the screw in hooks are not good for any fish of size. Russelures are through wired and solid. My second hit the son grabs the rod but after already fighting the barracuda he had no interest in getting another so he hands the rod to dad. This fish burned line and dove deep like a stud tuna. I got Tim on the port side in the middle of the boat and I got on the throttles. I do not know how long we fought this fish. It was jerking its head like a tuna, staying down, and I knew it was big. Once near the surface my eyes lit up bigger than the fish was lit. It was a stud Wahoo. He only had one small gaff. I had to make this shot count. When I stuck it the thing got wild and I just held on tight. A Calcutta has the back that drops down to make the entire deck at water level. I dragged the fish to the back and Tim grabbed the tail. We slid it on to the deck and closed up the back end. It was ours!

He only had a 4 foot fish bag and we had no where near the ice to keep this log cold. We covered it with a large towel and kept cold water on it. There was no way I was going to allow him to cut this trophy to fit in the bag. This fish was 71.5 inches fork and 74 inches overall. It was the fish of a lifetime. I called Will and asked him to come to me. I needed his fish box. We took a lot of pictures. Tyler is 6’5” and the tail is still on the ground. Notice how quickly the color changes as the fish dies.

By the time Will got to me I was able to set up a troll again. I got a massive hit again. We had another big one on but it managed to crush the mirror lure and get away. Although those lures work they are not made for the crushing blows these fish produce.

Through out the rest of the day we fished in better water but only managed to find 2 keeper yellowfin. On the way in we stopped at a state rig he had nailed the red snapper the day before. Conditions were different. The water was as dirty as the river itself. We moved all around the set of rigs but never got a bite. We needed 20 ounces to get down and the bait was still running out. I made a move about 3 miles away. The water was still running fast but a bit cleaner. I marked fish but it was not until the boat was in the right position that we were able to get bites. Due to the current and smaller size circle hooks we had difficulty getting our 6 red snapper. We made it back without any fog. We heard talk on the radio of thick fog setting in fast and Tim was wondering what they were talking about. As soon as we hit the dock the fog was upon us.

Once at the dock reality set in. This fish weighed 104.7, was 71.5 inches fork length and 74 inches overall and had a 31 inch girth. Do not know where it stands on the state record but it has to be up there somewhere. Truly the fish of a lifetime.

It was a six-fi gure dollar venture, bringing talent and rarifi ed panache to the Northshore. Festival Bonfouca was and could continue to be a rollicking good time for thousands or tens of thousands of St. Tammany area residents. Unfortunately, a lousy weather situation and the newness of a really polished endeavor left its parent company and promoter holding a rather large fi nancial bag. Rain on Friday night and much of

Saturday had the sparse crowd coming and going from opening until the lightning-interrupted Saturday night fi nale. At least Sunday brought much appreciatedsunshine and decent temperatures but the trademark of March (wind) kept things interesting throughout the 2 1/2 day event.

Because of the festival’s intensity and a series offollow-up commitments, we were unable to visitpost-mortem with festival promoter and Mothership member Jared Zeller. Mothership, the parent company of the festival, was formed in 2005 to help with the recovery from Katrina and their fi rst celebration was along Bayou St. John in New Orleans, the Mid-City Bayou Boogaloo, which now hosts tens of thousands of fans each year. In 2014, local Slidell artist Lori Gomez and others envisioned a spring kickoff celebration in Heritage Park that would rival or surpass the impact from other summer and autumn festivals and artistic series in Slidell. It was and is an outstanding idea, not only for Slidell but for the entire Northshore, where really great festivals of this genre’ have been few and far between.

Zeller received commitments from talent such as Sonny Landreth, Molly Ringwalds, Marcia Ball and Big Freedia to appear. But not all of the acts were sponsored and not only was there a cover charge (a nominal $5.00 Friday and $10 for either Saturday or Sunday fee) but Zeller had to absorb costs that a festival of this type normally covers with a larger gate. This was an ambitious initial undertaking, with family and children’s activities that were generally sabotaged by the weather - the Family Village, canoe and kayak rentals, a fi shing tournament, etc. But the layout of the grounds, the diversity of the events, artists, exhibitors and the quality and scope of the food vendors portends a future success for this festival. Zeller was aided in large part by the efforts of volunteers, most of whom share his Mothership vision and who have waged these battles before. Zeller stopped short of formally committing to a 2017 festival date, but he did say his marketing

efforts would allow for a reprise because much of what he created in signage and merchandise would not be dated for a future event. Zeller also indicated efforts to make the festival a free event would continue. We may not know for a while whether Bonfouca will be back, either in its premier mode or with alterations. But if it does return, make plans to attend because its the closest thing to Jazzfest the Northshore will ever know. Especially at these prices. At least the weather was vintage Jazzfest.

Christ the King Parish School held its annual Scholastic Book Fair the week of March 7, 2016. Librarian Lee Ann Boudreaux welcomed students, parents, grandparents, and teachers as they arrived to browse and purchase books. The library sold books totaling $6,300 and the library received 1,000 Scholastic points to be used for future book purchases, as well as some cash for the library to use.

I’ll never forget the first time I walked into my high school best friend’s family home and saw pies covering every surface of the kitchen and dining area, from tables to countertops to windowsills. I could smell the feast’s third apple pie crisping in the oven. It was the day before Thanksgiving.And yet, I was confused. Also salivating.

“Why in the **** are these seemingly sane people making 10,000 pies for one occasion?” I wondered. My New Orleans suburban family could certainly appreciate a quality dessert spread, especially during the holidays. But this just seemed ridiculous.

What is it about pies that makes them so American? And in some cases, so Southern?Let’s find out.“As American as Apple Pie”Like Thanksgiving, the American tradition of pie began with the earliest European settlers, the Pilgrims. The Pilgrims had brought with them apple spurs to grow fruit-bearing trees. Because apples were plentiful and easy to dry and store in barrels during the winter, it didn’t take long for apples, and thus apple pie, to become a common early American treat.

Practically DeliciousPies didn’t just serve Pilgrims’ taste buds—they had a practical purpose too. Pies use less flour than bread (the filling replaces the extra flour needed for the middle). So settlers could bake them easily and, most importantly, cheaply. That made pie a more sustainable and ration-friendly food, which was necessary in the early (Read: hungry) days of the American colonies.

Why in the South?Pies are a tradition in any part of the country, from Boston Cream Pie and blueberry pie in New England to cheese and cream pies in the Midwest (dairy country). But the South gave way to a few signature pies that are essential to regional dessert spreads. French immigrants in and around New Orleans created the beloved pecan pie using the pecans shared by the local Native Americans. Another popular Southern treat is chess pie, a rich, drool-worthy mixture of sugar, cream or buttermilk, egg and sometimes bourbon. A few states over, Florida settlers made use of local citrus to create the oh-so-tangy key lime pie.

Once I was privileged to actually taste a few bites out of each of my friend’s 10,000 pies, I had a blissful sense of understanding (and stomach ache) as to why someone would surround themselves with pies galore. It’s an American thing. It’s a Southern thing. Now hush up, and eat your tradition.

IA few months ago, a topic was presented that peaked my interest: cookies! More specifically chocolate chip; and the crispy versus chewy debate. For those of us that like to know the “whos” and “whys” of this cookie debacle, I would like to provide a little insight.

Personally, and I know more than a few people can agree, soft chewy cookies are the only way to go. But how do you make that perfect chewy chocolate chip treasure? When I say treasure, I don’t use the term loosely. Some of us have gone through dozens of recipes searching for that magic formula. So how do you weed out those recipes that just don’t satisfy your taste buds’ cravings? Here are some things to consider:

Look for recipes that call for more brown sugar than white granulated sugar. For those that don’t know, brown sugar is an invert sugar. Invert sugars can be described as moist or liquid sugars and sweeteners. Brown sugar, corn syrup, honey and molasses are all examples of invert sugars. They help retain moisture while the cookies bake; this is why molasses cookies are always soft and chewy. For a chewy chocolate chip cookie, the common ratio for brown to white sugar is 2:1. A good example for this situation are shortbread cookies. Shortbread uses only granulated white sugar. The texture is pretty universal. If your shortbread cookies don’t have that satisfying snap, as well as a few crumbs settling in your lap, it may be safe to say that they came from a mysterious tin on top of the freezer that could very well be from last Christmas…or the one before that.

Secondly, there is the baking soda versus baking powder factor. Baking can be much more scientific than you think. The simplified explanation is that baking soda reacts with acid (this includes brown sugar) and baking powder begins to take effect once the cookies are introduced to heat. This means that if your recipe calls for baking soda, or a combination of baking soda and powder, that you want to bake your cookies just after you’ve finished mixing your dough. Otherwise, the reaction from the baking soda may cause your cookies to become a little too cake-like (unless that’s what you want). However, a little chill in the fridge or freezer will slow the process down if you’re not ready to bake right away.

Lastly, there are a few other factors that play into the texture of your perfect cookie. For chewy cookies, you may have noticed that many recipes call for additional egg yolk. This is because although eggs provide moisture, the yolks help to keep that tender, chewy consistency you are probably looking for. So all in all, you can make a dozen batches of chocolate chip cookies and change one ingredient in each, and you will have 12 batches of completely different cookies. Hopefully these tidbits can help you perfect that certain recipe that you’ve been working on for months, any you may just be able to offer a few pointers at your next office party.

Upon his arrival, Chester was tested for FIV and FeLV. He tested positive for FeLV. This is a disease that affects the immune system. It is not contagious to dogs or humans, but it is contagious to other cats. The life expectancy is one to three years, longer if they are in a home. Chester is such a love! He loves having his ears and back rubbed. If you have a window he can perch himself in front of, that would be the perfect napping spot, other than your lap of course. Chester would love for you to come to PAWS and visit with him. He is neutered, up-to-date on shots and micro-chipped. Come by PAWS and fall in love with Chester.

Meet Deuce. He is a 6 year old Terrier/pit mix. Deuce is great with kids and is still working on playing with other dogs. Deuce is very treat motivated. He loves to run and play in the yards here at PAWS. He has had minimal training in the past. Deuce is neutered, micro-chipped, and up to date on all shots.

Buddha is a handsome guy looking for his forever home. He came to PAWS as a kitten and has been in a kennel since. He tested positive for FeLV which is Feline Leukemia. This disease is passed on through grooming and can be transferred from mama cat. The life expectancy of a cat with FeLV is 1-3 years, shorter if their life is spent in a shelter. Buddha is such a sweet, lovable cat. When you open his cage, all he wants is for you to pet him and rub his ears and back. All he wants is love. He would need to be in home with no other cats or another cat with FeLV. Though Buddha’s life expectancy is short, he would be a great addition to any family. The love and attention Buddha will give you immeasurable. He’s microchipped, neutered, and updated on medical.

Meet Blue Rose. She is a 3 year old Terrier mix. Blue Rose is a very beautiful and sweet girl. She loves to run and play here at PAWS. She does great with male dogs. Blue Rose is very treat and toy motivated. She is very afraid of water but enjoys playing fetch. Blue Rose is spayed, micro-chipped, and up to date on all shots.
